Favorite Crockpot Stuff

I'm looking for new ideas for my crockpot, so I'm asking everyone to put their favorite recipe's here.

I'm looking for a really swell Seafood Gumbo (with File rather than okra) most of all.

Recipe?  I just use some kind of meat, whatever vegetables are on hand, the spices or sauces I'm loving at the moment, and a dash of wine.  I'll be watching this thread for new ideas too :)

Pork Barbacoa: pork roast, can of Coke or Dr. Pepper (not diet), can of red enchilada sauce or salsa, garlic powder, 1/2 cup or so of brown sugar.  I usually serve it in burritos or tacos, but it also makes a good sandwich.

I've had luck with chuck roast and Lipton Onion Soup Mix.  I brown the roast in a pan first. I also put in much more veg than the packet says.  Don't judge.  It's rustic, dammit.

I also use it cook beans.

I made a great chicken caccatorie this week. or however the hell you spell it. Super easy and delicious and served over pasta.

Hey, when it comes to the crock pot, sometimes you've gotta embrace the old school! A roast with the onion soup mix is damn, damn good!

If I'm venturing beyond the classic pot roast, this short rib recipe is one of my best, when it comes to the crock pot.

I also do variations on the BBQ pulled pork, but the simplest is just a pork roast with your choice of BBQ sauce.
