What Easter treats are you doing this year that could be considered healthy?
I haven't decided yet and need to go shopping tonight for the DH.

we are going to a vegan restaurant.
my girlfriend is doing a fritatta and a salad. Sounds good.

Hmm.. Becky and I are planning to run long tomorrow and go to Minado!

Our side dishes will be good for us - asparagus, roasted carrots, new potatoes with peas & pearl onions. And the roasted chicken will be good too.
I make no such claims about the brisket. Or dessert. :D

The healthy part, for those of us who are omnivores:
(Grass fed local farm) leg of lamb, roasted baby red potatoes, roasted asparagus, garden veggies toss salad, home baked french baguettes, wine.
No dessert.
The unhealthy part:
I've assembled a sugar-bomb basket for dh, and have taste tested the leftovers. :D

Pastel meringues for a not too caloric sweet treat. Actually doing this for passover since they are wheat free but should work for Easter too.

We are having a healthy Easter: we are not doing anything special.

I guess I ended up going healthier than normal, LOL.
Breakfast:
my coconut flour/oat bran pancakes.
Lunch:
Chorizo egg "muffins" (this was to be grass fed chorizo but they had sold out. :(), with fresh salsa
Dinner:
Ham with asparagus and a salad. Sliced strawberries with balsamic vinegar and pepper for dessert.
I did buy the DH some jelly beans. At least it's not our usual sugar bomb breakfast this year!

I made a batch of Balela to take to mom's this evening.
Hope it goes well with our lamb roast.
Not sure if my recipe is as tasty as Trader Joe's. My Bossy-pants little sis will be sure to let me know.

I added some sweet potato too, the quinoa was awesome.
We were going to go to china town but were hit by a torrential rain storm, so I ended up with falafel.

That looks good. I am making that this week. I bought some turmeric at Penzeys over the weekend. My first time in that store, and I love it.

Enjoy! First recipe in a long time that the spices were perfect and I did not need to add. Oh I also added chickpeas.

balela should be fanatastic with lamb! and neve rmind the mouthy sister, home made will be better.

Very similar to this, but I added:
1 Tblsp chopped dried mint
1 Tblsp balsamic vinegar
2 tsps red wine vinegar
Add or delete the vinegars, according to your on taste preference.
Also, instead of scallions, I finely chopped a red onion for a more powerful flavor.
I made it early in the morning, and stirred several times throughout the day to let the flavors really blend together over 8 hours.
We served the salad at room temp...mmmm, nummy.
I had some for lunch today, and it is even yummier! The longer the flavors have time to mix, the better.

i made an enormous sweet potato, pepper, and black bean salad, and we grilled some chicken.
then we ate apple pie.
