I used dried chickpeas. It is amazing the taste difference! Much more flavor and nuttier.
Unfortunately, I made far too much so hopefully can freeze it!

Did you peel the chickpeas? :D

Add a light layer of olive oil to the top before you freeze it, this will prevent freezer burn.

yes, it freezes very well. I like to add black olives.

The one and only time I have made hummus, it was not a success. I used dried beans, but couldn't use tahini, which I am guessing was the big difference.

Oh yeah, tahini is a key ingredient. It's like leaving the olive oil out of pesto.

Peanut butter works pretty well. I can't tell the difference.

Nothing. I found a recipe, that got GREAT, reviews (epicurious(sp?) maybe?) Yea, it was crap. It is also very possible that it was user error. I do not claim to be a good cook.
I did not use the tahini due to the it being potentially lethal to my youngest...PB would definitely be a bad substitute as she is also allergic to peanuts. :D
Once she is older, I will likely ease up on what is allowed in my house, but I attempted to make that for a party where I was not going to be with her 100% of the time...so nope.

I should mention, that my solution now to when I want hummus is just to go out at lunch when DD#2 isn't around. No exposure and it tastes so much better than what I made. :D

DH is the hummus maker in our house -- he always uses canned beans, though. It comes out really great, but I wonder if it would be even better with dried beans. Now that I have an instant pot, I'm not afraid of dried beans anymore.
Tahini is key, but we also like lemon and a good dose of garlic in ours.

I love salt!
