Mint!!

I finally found a spot to plant mint and it’s seriously happy. What are your favorites for mint?

I have mojitos and adding to water already on the list. Other suggestions? Marinades etc?

Ha! I know—this is in a huge pot, with zero possibility of escape. I waited ages to plant it for this reason.

I'm been making a mocktail with muddled mint, lime seltzer, and a little sweetened lime juice.

Mint chutney!

I think Sanjay Thumma ("Vahchef") in the linked video is pretty entertaining and cute as a button.  I've made mint as well as coconut chutneys based on his recipes.

So also a mocktail involving muddled mint and muddled frozen blueberries, a small amount of simple syrup and small amount of ginger syrup, and seltzer is pretty darn good!  You do have to be careful with the ginger syrup or it will overpower the mint.  (Really the mint just adds a taste of "fresh" more than "mint".

Anyway, I did this last night and it was yum.

I double the herbs and don't worry about them sounding right ... thyme doesn't really make sense but tastes great blitzed in a yogurt based dressing with other herbs.

Also, mint, watermelon, feta salad.

Sprinkled on your regular green salad.

Mint sprinkled on grilled eggplant with feta is also delicious. I do like it with watermelon as well (as posted above)

Oh, that sounds good Jan! I’m a huge feta fan and we have an eggplant that’s almost ripe. Will definitely give it a try.
