I need ideas, I have a few nice halibut filets tonight for the grill.
Foil packet or right on the fire?
I have most of the main herbs and spices (including a big bundle of thyme I'd like to use up). Easy is better, I have some people here that I want to spend time with so don't want to kill myself in the kitchen.
Ideas?

I suppose it could be a ceviche, too, but not all of my guests will dig that, I'm afraid.

I would do right on the fire only because I don't like moist fish (like it comes out in the packets). I don't like any fish juice. We have a popular fish tagine that I hate because of the fish juice.

So, I wound up using an idea from epicurious that involved lemon, basil, olive oil, and capers. It came out fantastic. I just might eat the leftovers for breakfast...

My granny used to save the "juice" from draining tuna fish cans, she would give it to my mom for her cats.
She would pop it in the freezer until mom came over, labeling it PUSSY JUICE for reference.

My dog used to love tuna juice! (It's how I knew she was sick when she wouldn't eat it.)

So, I spooned some of the mixture onto the fish a few minutes before grilling, to let it marinate a teensy bit.
Then I handed it off to DH to grill.
When he was done, I poured the rest over the fish and served.
So, some of the capers (and basil) were lost to the grill, but it didn't matter in the long run.

We laugh about it all the time! It's my SIL's favorite story about her.

I love halibut for a ceviche. LOVE.
But your recipe sounds great.
