I've been buying a couscous salad at the deli that looks similar to this one:

Question, is this a different type of couscous since the grains are so big? I ask because one of the local markets around here was selling something they called Moroccan couscous. It had big grains like this. It was awesome. i bought some the other day (just asked for it, didn't look for it) and it had small grains. I was confused. But I am new to eating couscous. The new stuff is still good, but I liked the other stuff better.

couscous is a semolina pasta - the israeli couscous/moroccan couscous grains are just made larger.

1. I like it with the larger grains also.

That is what I had assumed, but then was surprised when they were small grains again when I bought it this week. I am guessing they just used the wrong kind this week.

Israeli couscous and Moroccan couscous are very different. Since I've never had Israeli couscous, the only difference I know of is the size, but I'm sure they cook and maybe taste differently too. Moroccan couscous is used in a couscous dish, of course, but it's used in taboouleh as well as other cold salads.

The semolina grains are Moroccan couscous, the big pearl grains are Israeli. We don't have the big couscous.
