Sooooo, this is actually my next project, the gingerbread family of molded cookies.  So I can guarantee you I will make this recipe, after I get over the current hurdle of which mold to make or buy???

I've been trying to score an antique spekulatius board on Ebay.  It seems I have very expensive taste, for the most part.  So I've been taking screen shots of individual critters I like, with the idea of carving one myself.  A trend has emerged, and the ones I like the most look like cute monsters, bugs or pokemon. (The intent is that they be cats or such, but not all carvers are hugely talented)  So that's what I think I might do, during the winter when I have the time, is carve a spekulatius board with cute little monster mold cookies.

What I think should happen, lol, is that with the availability of 3d printing and engraving, it would be easy for families to make heirloom type molds for Christmas time and have a tradition of making cookies from them.  Anything would do- a mold made from "refrigerator art", or anything else the kids would love.

And FWIW I think the gingerbread type cookies would be best for the family tradition, as the dough is tastier and easier to work with than springerle.  Speculaas dough can be make weeks ahead and kept in the fridge.

The recipe is excellent- I goofed on the glaze a bit because i had forgotten to note the desired consistency- I write the recipes down rather than work off my phone.  So the glaze was too thick by just a little and doesn't show the designs well.  Happy mistake, mo glaze mo yummy.  I could have scraped it off and started over, but no.
