Who is packing their lunch for work (or school) and wants to share ideas? I'm getting tired of bringing leftovers and sandwiches are only mildly appealing to me, so looking for new things so I don't run to the deli next door and spend too much money. :D
I made a variation on this salad to pack using quinoa since I couldn't find the barley I thought we had. I also had fewer green beans than called for and used dried dill instead of fresh.

this is a delicious chickpea salad - and it is great for packed lunches (i made it once for a bridal shower, ate all of the leftovers, and then made more) :

Both those salads sound good to me. :)

Soup has always been a go-to for me. It's easy to make 4 batches at once and end up with 20 lunch portions in various flavors. Soup, apple, string cheese, a few almonds, and a greek yogurt was my go-to for snacks & lunches for a long time.

Almonds are an excellent thing to have on hand! There's an emergency bag of them in my locker. :D
