I've never cooked tofu before and I got some today - silken variety. Are there any recommended recipes from Yammerers for this?

I suggest breading it and frying or baking it or tossing silky ones in a stir fry.

My favourite thing to do with silken toad food is to mash it and mix with grated vegetables plus some ginger, garlic & hot chili; use that to stuff wontons for either steaming or frying.  I find silken tofu difficult to use. 

A friend of mine makes a wicked vegan chocolate mousse with it, but I have no idea how he does it.

silken tofu? that is best in smoothies, puddings, pies, etc. It is not really something you want to eat as a stirfry or meal type tofu, that would be for more firm or extra firm. I do make a tofu omelette with silken tofu.

I found this. Which looks good, I'll try it at the weekend.

Ingredients

2 tbsp olive oil
1 onion, chopped
3 garlic cloves, finely chopped
2 x 400g cans chopped tomatoes
50g pine nuts, roughly chopped
400g bag spinach
pinch grated nutmeg
349g pack silken tofu
300g pack fresh lasagne sheets
4 tbsp fresh breadcrumbs

Method

Heat half the oil in a pan, add onion and 1/3 of the garlic and fry for 4 mins until softened. Pour in tomatoes, season and bring to the boil. Reduce heat and cook for 10 mins until sauce thickens.
Heat half remaining oil in a frying pan and cook another 1/3 of garlic for 1 min, then add half the pine nuts and the spinach. Wilt spinach, then tip out excess liquid. Whizz tofu in a food processor or with a hand blender until smooth, then stir through the spinach with the nutmeg and some pepper. Remove from the heat; allow to cool slightly.
Heat oven to 200C/180C fan/gas 6. Pour half tomato sauce into a 20 x 30cm dish. Divide spinach mix between lasagne sheets, roll up and lay on top of sauce. Pour over remaining sauce. Bake for 30 mins.
Mix crumbs with remaining garlic and pine nuts. Sprinkle over top of dish, drizzle with remaining oil and bake for 10 mins until crumbs are golden.

silken tofu can be used as an egg substitute in quick bread recipes (i used to use it in cookie dough - makes great chewy cookies with a crisp outer crumb, and the raw dough isn't a potential source of salmonella).

otherwise, i've used it in vegan lasagne as a ricotta substitute.  firm tofu is better for stir fries, grilling, etc.

that said, i no longer eat soy.  so feel free to ignore me.

not me, but you could probably use seafood instead of beef/meat.

soondooboo (aka soft tofu) jjigae is usually made not with meat but with seafood anyway.

see those oysters in the picture I posted?
