I'm sorry to put y'all on the spot, but I'm headed to the store in an hour. ;)

This is for lunch tomorrow.

You want to make it in the IP? http://blog.fatfreevegan.com/2009/05/ridiculously-easy-lentil-soup.html is a great lentil soup recipe. I posted about my refried beans in the IP Monday and RA posted the link to my recipe, you could tacos and fixins with them. (Guac, salsa, cheese, lettuce, taco shells)
Fionn mac Cumhail :Meri will rise from the casket and beat you...and then run one last Badwater before burying herself.

I'll save that one for when the vegan boss is in town. He's on vacation--a yoga retreat in Costa Rica-- so the theme for tomorrow is unhealthy!!!

I panicked and made a chicken salad in lettuce cups which nobody will like because it has fennel and arugula in it. I really need a go-to for these things.

However. Since I needed cooked chicken, I put some boneless chicken tenderloin in a foil packet, in a steamer basket in the Instant Pot with 1.5 cups water and cooked on high for 4 minutes, and it came out nicely. So that's good to know.

It ended up going over pretty well. Too much olive oil in my dressing, but good overall.
