Shalane Flanagan's new cookbook

I'm a fangirl so I couldn't resist!

Basic review: some great recipes, some okay recipes, some recipes that could really have used a bit more testing. Also: I've discovered I don't really care for teff (the grain that is used in Ethiopian injera) - too gritty. I like that there are no calorie counts and the recipes focus on nutrition for athletes and isn't really "gimmicky" (although there are certainly health-food-of-the-month type of ingredients, like coconut oil).

Here's one of the really good recipes:

Superhero Muffins

Ingredients:

2 cups almond meal
1 cup old fashioned oats
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tsp. baking soda
1/2 tsp. salt
1/2 cup chopped walnuts (optional)
1/2 cup raisins, currants, dates and/or chocolate chips (optional)
3 eggs, beaten
1 cup grated zucchini (about 1 medium zucchini)
1 cup grated carrots (about 2 carrots)
6 T. unsalted butter, melted
1/2 cup dark amber maple syrup
1 tsp. vanilla extract

1. Position a rack in the center of the oven, preheat to 350 deg. Line a 12 cup standard muffin tin with muffin cups.

2. In a large bowl, combined the almond meal, oats, cinnamon, nutmeg, baking soda, salt, and walnuts/fruit/chocolate (if using).

3. In a separate bowl, mix together, the eggs, zucchini, carrots, butter, maple syrup and vanilla. Add to the dry ingredients, mixing until just combined. The batter will be thick.

4. Spoon the batter into the muffin cups, filling each to the brim. Bake until they are golden brown on top and a toothpick comes out clean (25-35 minutes).

good to know, thanks!  if I hadn't just used my zucchinis in a crustless quiche I would have all the ingredients in the house now.

That's true of any "celebrity" cookbook, no? (Arguable whether she is a celebrity). I've found it to be a book more geared to beginning cooks, but there's a few recipes I really like.

I never really look at celebrity cookbooks, so it just struck me as such.

Let me know how they turn out. I haven't found a breakfast muffin recipe I like that pops out of the tins well.

I used parchment paper tin liners. No issues and the frittatas turned out well.

Picked this up this afternoon from the library. Exceeded my expectations. The recipe names are corny but the recipes looks great. A few I will save for later.
