Foodies, brainstorm for me plz!
« on: December 18, 2014, 10:14:47 PM »
I was shopping the other day and saw a yule log in a cheese case.  I thought OMG, too cool, a cheese yule log!

It wasn't.

But the idea has stuck with me.  Is is possible to craft a tasty savory yule log?

All i can think of is to do something like this:

Parchment paper to facilitate rolling
Layer bread on top
Spread a layer of warmed herbed cream cheese on top of the bread.
Then a layer of ham.
Then a layer of vegetable/something/something.
Roll it all together.
Spread cream cheese over the outside, use real mushrooms etc to decorate.

brainstorming, not advice...

there are a few recipes for savory sponge cake, which might be easier to roll than bread (largely because I imagine the bread in multiple pieces)
lemon-pepper sponge
black sesame sponge
kalamata olive sponge
but bake in a jelly roll pan

if you whip cream cheese and fold in a bit of whipped cream (not sweetened), it would be easier to spread and have more body

Duxelles would make a great bark spread over rolled layers of puff pastry or phyllo with ham slices and cheese and or olive tapenade.

I would modify a jelly roll recipe to make the "bread" savory myself.

I've been thinking about that and didn't think I could pull it off. 'bou's recipes look good .

Maybe english muffin bread, bake it in the jelly roll pan, then before it gets rolled toast it under the broiler?  Could be good.  Esp with the ham and cream cheese.  And some chives.

The duxelles sounds very yummy, trying to work that thru in my head too.

The black sesame sponge would be very eye catching.

My dad made this for christmas dinner. Very tasty, attractive, and most of the way to your bouche de noelle. http://www.jamieoliver.com/recipes/cheese-recipes/gluten-free-spinach-ricotta-roulade/
