S what are your favorite 3-400 calorie meals? Bonus points if they're protein focused and breakfast friendly :)

I like an egg white omelette with salsa (100 cal of egg whites and 100 cal of cheese and whatever of salsa) and then about 150 cal of chopped up fruit.

Scout loves pancakes and french toast, but I've been trying to get away from the empty calories of bread, so we've been slicing apples and bananas, dipping them in some egg and putting them on the grill pan with a dash of cinnamon.

We also do egg white fritattas for lunch which can be very filling for 300 calories.

I don't have time for laundry; I'm trying to have a great life.

Brekky:
One whole egg + one egg white scrambled with torn heaps of baby spinach. Season with black pepper.
Wrap in 6" corn tortillas or not...depends on what your needs are for the morning.

or

1/2 cup no-fat plain Fagé yogurt mixed with 1/2 cup cooked chilled quinoa or buckwheat groats. Stir in high quality Vietnamese cinnamon and blueberries.

On, Wisconsin

I made a really yummy scramble this morning.

1 cup egg whites (like egg beaters) + 1 regular egg
2 cups spinach
1 cup chopped tomatoes
2 oz part skim mozzarella
salt
pepper
basil

478 calories total and it served two.

My standards are 1 ) oatmeal with whey protein and almond milk
2) oats in a jar.. (google it, it's all the rage and is transportable.
3) two eggs over easy cooked in pam on eaten open faced on an english muffin.

In a pinch. if needs to go with.. hard boiled eggs.

The above 3 a version of every single day.

MoS: for number 1, do you just cook instant oatmeal and stir in protein powder?

Yes.. I use Trader Joes and put it in after and some almond milk.. You have to play with the time a little because you want it thick if you are adding the milk.  Some times I also add my own cinnamon since I use plain oatmeal. I use chocolate protein powder

I do something similar to number 3, but I use old fashioned oats and don't cook it at all or sit overnight,  raw oats, yogurt, dried fruit, nuts, etc.  I call it slosh.

Sometimes I just scramble up three eggs.  That's about 250 calories.  Most mornings though, I have a pancake.  Made with oat bran, cinnamon, sweetener, an egg, and a blob of soft cheese.  Also just about 250 calories.  More filling, though.  I'm never hungry before lunch.  And I mix up a week's worth of the dry ingredients in advance, so the whole process of making breakfast takes just a little over 5 minutes.  If I was really organized, I would cook up a batch of them on the weekend and just nuke one every morning.  They keep fine in the fridge.

HOT steamed rice with steamed veggies, with an egg cracked on top (to cook) - add sriracha, oil, whatever, etc. to taste.  stir.

Cooked oats in the microwave then mixed with greek yogurt and strawberries.  I like to use 1/3 cup of dry oats (100 cals), about 1/2 cup yogurt (85 cals if you use 2% plain, I find that a little bit of fat helps the meal stick with me longer) and 1 cup of strawberries (50 cals).  Depending on how sweet the strawberries are, I might drizzle some honey over everything (2 tsp is 40 cals).  That's a little less than 300 calories and about 20 grams of protein.  You could up the amount of oats you use if you want more calories, but personally I can't eat that much in the morning.

Do you still have the instinct diet book? I liked her 300 calorie meals quite a bit.

I'm not big on breakfast either. I like lunch for breakfast!

That said, one of my favorite 3-400 cal meals is a skillet of scrambled eggs with sauteed onions, peppers, and tomatoes.

a 300-400 calorie meal is not different from another one; the 300-400 calories are really determined by the size of the portion you took.  Just sayin'.

I don't think she was thinking she was going to make big meals that you portion out.. I think she was thinking of quick ideas that you could make 1 serving on a work day and be around 300 calories.. most people don't make multi portion casseroles and such for break fast on a daily basis.. especially not when they have a job and 4 little ones to deal with.

Actually, I do.  I make one pot of oat bran for four days in the rice cooker.  I then quickly add some toppings in the morning and reheat in the MW.

Really? Oatmeal is so fast on the stove and I make rolled oats. We don't use the microwave.
