What to do with dill?

One of the things that drives me nuts about (a) trying new recipes and (b) buying herbs - at our local store they only sell pretty big bunches of things like dill. I wanted to try this recipe for Sweet & Sour Cucumbers with Fresh Dill (which was good by the way - we had burgers with sweet potato fries and it was a nice crunchy veggie addition to that meal).

So now I have all this dill kicking around and nothing to do with it. I haven't really cooked with dill before, so does anyone have any ideas?

Mix it in with plain greek yogurt + garlic (or garlic powder) + some salt to make a delicious dill dip.

ROASTED CARROTS!!

I just tested out several seasonings - all were fabulous!!

Preheat oven to 400. Cut carrots lengthwise, scatter over cookie sheet, liberal drizzle of olive oil, sprinkle with chopped dill.
Also did Herbs de Provence
Rosemary
Cumin & ground cinnamon

Roast for 20-30 min or more, depending on carrot size or preference for doneness.

Bonus: I didn't have any good bread on hand, but if I did, I'd have sopped up the oil on the cookie sheet.

I use it on pita bread triangles... cut up pita bread, coat with a thin layer of butter or olive oil, sprinkle on dill, bake at 350ish for a few minutes until crispy on the edges but still a bit chewy in the center. Makes a great side for baked salmon, etc.

I second caitos suggestion. So good! Also great in spanikopita. Also baked salmon with lemon and dill. Potato salad with dill is also amazing. Lastly just put "dill" in the search engine of epicurious or myrecipes.com for more inspiration.

Since I know you share my weakness for painfully Midwestern dishes, you could try using it for salmon parties/salmon loaf...

Mix a can of salmon with finely chopped onions, an egg and enough saltine crackers to give it structure. Add salt, pepper, and copious amounts of dill. Shape patties or loaf. Pan fry patties in olive oil. Cook the loaf in the oven.

For maximum effect, serve with peas

that's exactly how my grandmother made salmon patties (stale dried dill though) when I was growing up... it was one of my favourite meals as a kid  :)

That sounds might tasty.  :D I think I had something like that at a friend's house in NH once, with a lovely white sauce on it.

I sometimes boil up potato chunks until just soft and add butter, dill, parsley, salt and pepper for an easy side dish, especially when it's winter.

It's really nice with Salmon. Fresh or smoked.
Chicken soup too. It's in the packages of fresh soup vegetables in the markets here.

Basmati rice is really good with dill. Especially if you serve it with salmon. That's one of our go-to meals.

I'm going to give you my honest opinion which will be absolutely of no use to you.

I would throw it out.
I can't digest dill. Every time I eat it, I get stomach cramps and the next morning start puking.
I guess it really affected my association with it because I cannot even even eat dill now. I start gagging. Total turn off- and I am the furthest thing from a picky eater.

:D See? I told you it would be completely useless to you.
