Tagine Cooking -- Week 3 update

Back in July, folks were talking about tagines in this forum so once we got home at the end of the summer, we bought one.

So far, we've made two dishes.
The first, last Saturday, was chicken with preserved lemons and olives.  This recipe plus a cinnamon stick:

Tonight we had a fish tagine:

Couldn't find any grouper here in Iowa so we used cod.

I swear to :fsm:, these are the best two things we've ever cooked.  I have no idea how "authentic" they are but they are damn good. The broth on the second dish was amazing and the first was so fragrant and pungent, I drool just thinking about it.

I just looked up Korts recipe...anyone else try anything good?  We're going to try one every week.

Yum! The first one is one of the most common Moroccan dishes. I've never had a fish tagine. My family is not from the region where that dish is popular, so they don't make it.

I made this tonite, and you could easily do it in the tagine:

This is a very popular dish also. You serve the fries on top of the chicken. I doubled the spices, except for the cayenne, and used yellow raisins instead of olives. You can bake it in the oven on a casserole dish, or on the stove in your tagine. The recipe doesn;t say it, but after everything is in the pot, I add about a cup and a half of water to get that good broth (we soak it up with bread).

I'm going to have to try that fish tagine. I just looked at the recipe. It looks delicious!!

That tagine looks like one you'd buy at the market in Morocco. I I came to your house and saw that I'd think someone brought it back from morocco for you. The only people in morocco who have the ones they sell online that are shiny, simple, streamlined are people with cooking shows and maybe wealthy people.

Well, the Canadian husband is pretty happy about it...

Your tagine looks wonderful!  How did it taste?

DH devoured it. For me it was meh. I don't care for juice with fish, and I don't care for my veggies to taste like the fish. It's never been my favorite but I just wanted to try for him. I'll definitely make it again though.

Glad he liked it.  We like fish so we liked the broth (it wasn't too fishy for us) -- thought the carrots added a lovely, silky richness to the broth.  We sopped it up with some nice crusty bread.

Alas, I have to travel this weekend so no tagine on Saturday.  Next time around though we're going to try your chicken recipe.

I was thinking the other day that I want to make the fish tagine again. This time i'll soak the fish in milk the night before so there is no fishiness.
