Snacks and sandwiches

For some reason, I really love sandwiches. I'm a grazer (and also lazy) so I like items to grab or throw together easily.  I have a couple sandwich cookbooks for new combinations, which is nice, but some of them take an awful lot of prep time for a sandwich. Every time I make a grocery list I try to come up with some new regular items to add for snack and sandwich ideas and I've been uninspired lately. What are your nontraditional snack/sandwich foods?

One of my favorite sandwiches is chopped hard boiled eggs, green olives, and miracle whip.

Turkey, cucumbers, spinach, and cream cheese (with herbs/spices mixed into it if I feel fancy).

Roast beef, roasted red peppers, red onions, goat cheese. (Maybe horseradish too, or maybe balsamic, if I feel fancy.)

Turkey or chicken, avocado (possibly mashed up with salt & pepper and smeared on. You know what's coming. If I feel fancy.), red pepper, spinach.

I am all about specific components...a major protein, at least two veggies, and some kind of "glue" to season/hold it all together.  :D

Hummus is also a good one to add. I try to keep it easy, things that take little or no prep or are on hand, because yeah, it does feel like a lot of work for a sandwich at some points!

toasted onion roll + muenster or provolone or swiss or whatever sliced cheese you have + at least two sliced tomatoes + garlicky mayo + salt and pepper + some arugula

Tomato, red onion, dijon mustard, toasted or broiled. With or without and egg. YUM!

Green chili pimiento cheese on a grilled sandwich with bacon.
Leftover (home-made) macaroni and cheese on a grilled sandwich with bacon.  Maybe even a little sriracha.
Turkey, sliced apple, gruyere, dijon mustard, and honey, grilled sandwich.
Tuna salad made with the tune, mayo/miracle whip, chunks of Granny Smith apple, and raisins.
Italian grilled cheese which is basically 2 sided bruschetta - olive oil, sliced roma tomatoes, garlic salt, basil, and mozarella, grilled.

ETA: Actually, I often grill the two sides separately (bread, cheese, peppers and bread, cheese, artichokes), then put the spinach in between after grilling so it doesn't get too wilted.

Maybe??? You could definitely combine them all together with penne to make a nice pasta dish.

I have a pita recipe, it is broiled chicken with Asian marinade, toss in a pita with peanut butter, sliced red bell peppers and sprouts, delish the marinade is a Tbs sesame oil, tap honey, tsp soy sauce, chopped garlic.
