Barry, here's Prudhomme's Cajun meatloaf and hot sauce/gravy recipe (attached) directly scanned from his cookbook.  I'll find the Cajun shepherd's pie scan later.  I'm pretty sure Spawn the Elder scanned it at some point.

I sent the recipes for Prudhomme's Cajun Meat Loaf, Very Hot Sauce for Beef, and Cajun Shepherd's Pie to Barry since the attachment was funky.  If anyone else is interested in these, please PM me.

I really like this basic turkey meatloaf. I add in a little bit of finely shredded carrot or zucchini if I have it on hand.
