I have been loving kale. I am thinking of you, Amy!
Roasted with poblano peppers, garlic snapes, white corn kernels and few baby chopped red and yellow peppers, and some mushrooms. Wrapped in a corn tortilla and yum!

I have kale up the wazoo right now. I will try doing something like that.

It is SO easy.
And if the kale gets a bit of crispy, all the better.
I love it roasted and you can mix it with almost anything. Just add olive oil and whatever seasoning. I usually add hot pepper flakes and salt free seasoning.

Had it again last night but with zucchini, purple peppers, onions, corn kernels and shitake mushrooms. I also made kale chips. I don't like it in salads uncooked, but love it roasted.
