Thanksgiving menus

So now that we have a covid quarantine in our house thanksgiving plans have changed but the menu is still in flux. Here is what I currently have for the two of us allowing for plenty of leftovers:

Herb roasted turkey
Stuffing
Gravy
Mashed taters
Crescent rolls
Cranberry sauce
Green beans
Glazed carrots
Apple Pie

What am I missing???

I'm not really feeling a thanksgiving vibe so I'm thinking baked ziti, homemade focaccia, and tbd for dessert.  Still contemplating, though!

cranberry sauce

pumpkin pie
roasted fruit with dessert (apples, pears, cranberries)

not sure what else

I’m going to an outdoor, socially distanced dinner at my boyfriend’s parents’ house in Berkeley. We are bringing Bob the Bird, using the Samin Nosrat buttermilk brine recipe.

This is what I have planned for 4 of us (The Mister, the Spawn & me).  We'll definitely lapse into a food coma and have leftovers.

Stuffed mushrooms and maybe deviled eggs for early afternoon appetizers
Roast chicken, also buttermilk-brined a la Samin Nosrat, but with the addition of pancetta, minced garlic, rosemary, and sage jammed under the skin (based on a Tuscan recipe for guinea fowl)
Gravy per The Mister's procedure (this is his bailiwick)
Mashed potatoes with scallions
Savory sweet potato casserole
Sourdough bread dressing with sausage, apples, and leeks
Steamed Brussels sprouts
Pumpkin pie
Unoaked Chardonnay

If we can't find a roasting chicken, we'll go for a duck.

Ham for the meat eaters

Going traditional.
Roasted Turkey - I just watch a video on how to spatchcock a turkey.  I may try that.
Portuguese style dressing/stuffing - heavy meat based
mashed potatoes with caramelized onions.
Cranberry sauce - DD or DS is making
Roasted green beans with carrots
Dessert - tbd, DD or DS is making this.

It will be one of these two, neither of which I have prepared previously!  I'm kinda torn.  They both look good.  I'd swap out the walnuts for pecans in the second one.

I have a bunch of recipes, but if you have a good one, I'm happy to try it. 

So maybe these?  There are so many kinds of dark chocolate, unsweet 60% and all the variants upward. Maybe the more generic the better?
