Any good summer soup recipes?

I am interested in making some soups that aren't shouting winter... (and not gazpacho).

Moqueca! Also chicken tortilla soup. They both come from warm climates

Moqueca! Also chicken tortilla soup. They both come from warm climates

I don't currently have access to my cookbooks, but there's a great moosewood recipe for a cold cucumber soup with yogurt, mint, and dill, I'm sure if you Google you can find something similar. It's great with kebabs from the grill and your choice of bread.

Yes that's basically it. If you like mint, I highly recommend that as the additional herb. But I'm sure it's great as written, too.

It sounds like liquefied tzatziki, which is delicious.

On gazpacho, I'm not wild about the standard way it's prepared, but I love Andalusian-style gazpacho.  For those interested, I have attached the pdf of the NYT recipe that I use on the regular.  After chilling, I serve it in espresso cups.

Now see, that sounds good.  I haven't been all that thrilled with gazpachos I've tasted over the years.  Maybe it was the bread?  Anyway, will give this style a try as soon as I score some decent tomatoes.

Some Andalusian gazpacho recipes (Serious Eats, for example) use stale bread, but not the attached NYT recipe.  Straining it is essential.  It's such a luxurious treat - all that olive oil!  This gazpacho and bruschetta are on regular rotation during peak tomato season in MA, which unfortunately is short.  That's one thing I miss about New Jersey: the excellent tomatoes (and blueberries and sweet corn and peaches).

The recipe that Ice Cream linked looks really good.  I'd be inclined to blend it though and decrease the honey.  Love mint, basil, and fresh dill.

The Soup Peddler is a chain--there are around 3-- in Austin. You can either pick it up or have it delivered. All they do is soup, and they make 3-5 different ones each month. When it first started out, it was one guy who would make big batches of soup and deliver it on his bike. I think it was subscription-based: you got soup once a week, and you got whatever he was making.

Anyway, the recipe book has soups I'd never heard of before, like the bouktouf. Their mulligatawny is popular as well.

The zucchini soup was great. I used a lot of garlic.
