Tzatziki recipes

Anyone have a tried and true recipe?  I love tzatziki, we are trying to eat better and I want to try to make my own.  If I use reduced fat greek yogurt am I going to ruin it?[size=3rem][/size]

it will taste sharper and might be wetter but should be fine.

I don't measure, just eyeball :

yogurt
a goodly sized cuke, grated and squeezed (removing much of its moisture is key)
couple cloves of garlic, minced
a buttload of fresh dill, rinsed and chopped
squeeze of lemon
bit of olive oil
salt and pepper

mix to taste

I like to generously salt and then drain the shredded cucumber in a colander for half an hour before squeezing it out.

Pretty much witchy's recipe along with BA's salting step, but I substitute mint for dill.  I use full fat Brown Cow plain yogurt, but that's what I normally eat anyway.  It fills me up more effectively than nonfat or low fat yogurt.  Lately, we buy tzatziki from our local Greek market when we get their prepared foods (moussaka, pastitsio, spanakopita, lamb shanks) for dinner.  Their version of tzatziki is amazing.  They make their own Greek yogurt, also full fat.

I make it without either mint or dill, only because they are hard to come by, and it's still decent.
