Healthy Muffins
« on: August 24, 2013, 11:59:35 AM »
I found a recipe that is ridiculously good, IMO.

http://kitchenpreserve.com/zucchini-carrot-oatmeal-muffins/

I changed it up a little bit because of what I had on hand.  3/4 c of oats and 1/4 of flax instead of all oats.  1/4 maple syrup, 1/4 of brown sugar because I had no honey, and milk instead of yogurt.  Really good muffins.

Hmm those look like healthier morning glory muffins, which I adore. I'm going to have to try these with the addition of some raisins. Thanks! :)

Hm.  I am generally not a huge fan of zucchini bread and such, but I have a big-ass zucchini that my neighbor gave me that I'm not sure what to do with.  Maybe I will try this.  I may cut down on the honey a bit, since I've got vanilla greek yogurt in the fridge already, but no plain.
