Is it worth it? How do you use it? If I was to make one thing with it, what would you recommend?

I've only ever made 1 thing with it. It was a Blue Apron pasta dish.  I don't think it added much if any flavor. It was a premium recipe that we paid extra for.  So a bit of a disappointment.

Yes!  Risotto alla Milanese! Pressure cooker or Instant Pot is perfect.

For that, I use a generous amount (big pinch, so quite a few threads), and soak them for about 20 minutes of more in hot but not boiling water.  It extracts a lot of the flavor.  I add that to the IP (3 to 3 1/2 cups total liquid, so 1 cup of the saffron-infused water plus 2 cups beef stock).  I can taste the saffron!

This is what I did, but the saffron has no flavor. I used half the bottle. I think it was too old.

Yeah, you may as well throw out old saffron.  Fresher saffron should be fragrant.  If it is not, toss it.

My mother was gifted with Persian saffron from a doctor she used to work with when he returned from a visit to his family in Iran.

She wanted to “save it” because it was expensive. I found the never used container with her spices 20+ years later.

Ugh! Yes, I'm susceptible to that too.

I may buy some more saffron but only if I plan to use it immediately. This saffron was bought 2.5 years ago in an effort to stock up.

yes, so many people use it sparingly and infrequently because it is expensive, which means so many people never actually taste it

I buy it when I have a plan for it, then make a point of using it liberally and frequently until it's gone.
